"Beach Fence" Planter or Candle Decor

Ingredients for Beach Fence design:
Tuna Can
Clothes Pins
Flower or candle

Directions:
Clean the tuna can and dry it.
Clip clothes pins onto the tuna can.
Fill with flowers of choice!

Ingredients for Colored decor:
Colored Popsicle sticks
Tuna can
Glue
Rubber-band or hair tie

Directions:
Start with a clean and dry tuna can.
Put the rubber band or hair tie around the can and then put the colored sticks on pushing it behind the band.
Once all are on without spacing, put the can on its side. Lightly push on the sticks so that they lift a bit off the can and put some glue on the can and push the stick into the glue. Do that with all the sticks and then stand and let dry!
Put in the flower or candle.

**To avoid glue you can simply decorate and hide the rubber band with a ribbon!

NUTTER BUTTER DELIGHT

1 bag Nutter Butter Cookies, crushed 
8oz cream cheese, softened
1/4 cup butter
1 cup powdered sugar
3 cups milk
2 sm boxes instant vanilla pudding
1 cup peanut butter (or more to liking)
1/2 tsp vanilla
12 oz Cool Whip, thawed

Cream together cream cheese, butter & powered sugar & vanilla. In separate bowl mix milk, pudding & peanut butter, mix with wire whisk until all combined, chill until set. Fold in cool whip after pudding has set. Add cream cheese mixture, layer with Nutter Butter Cookies... Chill until ready to serve! Enjoy and Share

Meatball Sub on a Stick

Ingredients:
1 lb lean ground turkey
1/2 cup whole wheat bread crumbs
1/2 cup grated Parmesan cheese
1 Tbsp dried Oregano
1 Tbsp dried Basil
1 Tbsp dried Parsley or 1/4 cup fresh chopped
1/2 tsp Crushed Red Pepper
2 cloves garlic, minced
1 can Pillsbury Original breadsticks
1 cup shredded mozzarella cheese
12 (10"-12") wooden skewers
Marinara sauce for dipping

Instructions:
Preheat oven to 375°
Line 2 baking sheets with parchment paper. Set aside.
In bowl combine ground turkey, bread crumbs, Parmesan cheese, Oregano, Basil, Parsley, red pepper flakes and garlic. Form into 1 inch meatballs.
Open can of breadsticks and starting with one breadstick at a time thread dough then meatball. Repeat the process with 2 more meatballs alternating dough-meatball, ending with dough. Make sure to spread dough and meatballs away from each other by about 1/4", so the meatballs bake through and the dough has room to expand.
Bake for 20 minutes until the meatballs are cooked through. Remove from oven and sprinkle each skewer with 1-2 Tbsp of shredded mozzarella cheese. Place back in oven for 2-3 minutes until cheese is melted.
Serve immediately with warm marinara sauce for dipping.

Fudge Lovers Cream Cheese Cake


1 box Betty Crocker® SuperMoist® devil's food cake mix ...
1 box (4-serving size) chocolate instant pudding and pie filling mix
3/4 cup hot water 
3/4 cup vegetable oil
1 teaspoon vanilla
4 eggs
Filling
1 package (8 oz) cream cheese, softened
1/2 cup sugar
1 egg
1/2 cup semisweet chocolate chips
1/2 cup chopped nuts, if desired
Frosting
1 container Betty Crocker® Rich & Creamy chocolate
Heat oven to 350°F (325°F for dark or nonstick pan). Spray bottom only of 13 x 9-inch pan with baking spray with flour.
In large bowl, beat cake ingredients with electric mixer on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Pour into pan.
In large bowl, beat cream cheese, sugar and 1 egg with electric mixer on medium speed until smooth and creamy. Stir in chocolate chips. Spoon filling by tablespoonfuls evenly over top of batter. Using table knife, swirl filling through batter. Sprinkle with nuts.
Bake 47 to 55 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour. Spread frosting over cake. Store covered in refrigerator.

"OMG. I am so tickeled to see the before and after. This has been a wild ride and I just started my 2nd 90 day challange today. I can not wait to see what the next 3 months brings. Tropical Cheesecake



INGREDIENTS
SERVINGS 16 UNITS US
Crust
1 cup flaked coconut
1⁄4 cup chopped almonds
2 tablespoons melted butter
Filling
2 (8 ounce) packages cream cheese
1 cup sugar
3 tablespoons cornstarch
3 eggs
1 cup sour cream
3 tablespoons lemon juice
2 teaspoons vanilla
1⁄4 teaspoon almond extract
Topping
1⁄3 cup apricot jam
1⁄2 cup pineapple tidbits
2 -4 sliced kiwi
3⁄4 cup toasted coconut

DIRECTIONS
For crust:.
Mix crust ingredients together and press into the bottom of a 9 inch spring form pan.
Bake at 350 for 10 minutes and cool.
Filling:.
All ingredients should be brought to room temperature.
Beat cream cheese and sugar till smooth.
Add cornstarch and beat well.
Add eggs, and beat on low for just till combined.
Add sour cream, lemon juice, and extracts.
Beat just till blended.
Pour over crust and bake 350° for 45-50 minutes or till center is almost set.
Cool 1 hour and refrigerate overnight.
Next day remove the sides of the pan.
Heat jam in sauce pan.
Arrange fruit over top of cheesecake.
Brush entire cake w/ jam, and then press the toasted coconut onto the sides of the cake.
Prep time does not include refrigeration.

Buffalo Chicken Wraps


TOTAL TIME: 30mins
PREP 20 MINS
COOK 10 MINS
A little bit spicy -- you can always spice to your liking.
INGREDIENTS
YIELD: 4 wraps
UNITS: US
4 boneless skinless chicken breast halves, cut in strips
1⁄4 teaspoon salt
1 tablespoon Tabasco sauce
1 teaspoon oil
1⁄2 cup finely chopped celery
1⁄2 cup crumbled blue cheese
1⁄2 cup blue cheese dressing
4 -10 inches flour tortillas
1 1⁄3 cups shredded lettuce
1⁄4 cup grated carrot
DIRECTIONS
Combine chicken, salt and tabasco. Cook chicken in oil 4-5 minutes. or until no longer pink and liquid is evaporated.
In small bowl combine together celery, blue cheese and salad dressing.
Divide cooked chicken among tortillas. Top each with blue cheese mixture, lettuce and carrot and wrap.

PEANUT BUTTER KRISPIE BALLS

PEANUT BUTTER KRISPIE BALLS

A crispy peanut buttery little treat that is low in calories and WW points

Serves 45
Prep Time - 5 min
Cook Time - 15 min
Total Time - 30 min

Ingredients
4 tbsp butter
5 cups marshmallows
3/4 cup peanut butter
6 cups puffed cereal (I used Rice Krispies)
Dipping Chocolate if desired

Instructions
1.In a medium saucepan melt butter
2.Add in marshmallows and stir until melted
3.Remove from heat and stir in peanut butter until smooth
4.Gently stir in cereal until just combined
5.Let cool for 10 minutes then form into small balls (about 1 1/2 inch wide)
6.If desired dip into melted dark, milk or white chocolate and decorate as desired

Notes
Each ball is 2 WW+ points (with or without the chocolate)

MOM'S AWESOME CARROT CAKE

2 cups flour
1 tsp salt
1 1/2 tsp baking soda
1 1/2 cup oil
4 eggs (beaten)
1 c coconut
2 c sugar
1 tsp baking powder
3 tsp cinnamon
1/2 cup walnuts (i don't put them in as no one likes them in my house)
2 cups grated carrots
1 can crushed pineapple, drained

Mix together sugar, oil and eggs. Add dry ingredients and mix well. Add carrots, pineapple, and coconut, and walnuts. Pour into lightly greased 9x13 or I use a flute pan. Bake at 350 for 40-45 min or till done

Once completely cooled ice with Icing:
Icing
1 pack of cream cheese (softened)
1/4 cups butter (soft)
2 cups icing sugar
1/2 tsp Vanilla
Mix together and beat with beaters until light and fluffy. Spread on well cooled carrot cake

WAFFLE MAKER CINNAMON ROLLS

Use your favorite canned Cinnamon Rolls. The Jumbo ones work best. Place rolls in waffle iron individually. Cook 1-3 minutes (whatever the manufacturer says for waffles) and spread icing while warm.
These are Delicious and great for a weekend treat for the little ones!

WALNUT BANANA SQUARES

1/2 cup unsalted butter
1 cup Stevia or Truvia or Swerve
2 eggs
3 crushed bananas
2 cups all-purpose flour (gluten free works well too)
1 tsp baking soda
1/4 tsp sea salt
1/2 cup cold black coffee
1 cup chopped walnuts (or nuts of your choice)
Mix all ingredients together, pour into greased 13 x 9 inch pan and bake at 350 degrees for approximately 40 to 45 minutes. Cool on a wire rack. Enjoy!!
(** Note: I usually use over-ripe bananas that I have previously frozen. Makes it so much more moist & richer tasting!)

GF Spaghetti Pie Lasagna Style Pie

Ingredients:
8 oz rice spaghetti
1 lb ground beef (can sub turkey or chicken)
1 tsp onion powder
½ tsp garlic powder
16 oz frozen spinach, thawed and excess moisture squeezed out
1 ¾ cups spaghetti sauce
4 eggs
1 cup parmesan (4 oz)
2 tbsp butter, melted
16 oz cottage cheese
1 cup mozzarella, shredded
Directions:
Preheat oven to 350
1. Put on pot of water and cook pasta according to package instructions. Pour into colander to drain, rinsing briefly and return to pan.
2. While waiting for pasta to be done fry up the hamburger, drain fat. Add spinach, onion powder and garlic powder and heat through. Add spaghetti sauce, mix through and set aside.
3. In a medium bowl beat 2 eggs, add parmesan and melted butter and mix through. Add to pasta in the pan and toss or stir to mix in.
4. Grease 2 9 in pie pans, divide the spaghetti mixture between them and spread evenly over the bottom and up the sides of the pie pan.
5. In another bowl, beat 2 eggs. Add cottage cheese to the eggs and mix well. Divide the mixture between the two pie pans, spreading evenly across the bottom of the pasta crust.
6. Divide the meat mixture between the two pie pans, spreading evenly over the cottage cheese mixture.
7. Bake at 350 for 20 minutes. Remove from oven.
8. Sprinkle ½ cup mozzarella over each pie and return to over for another 8-10 minutes, or just long enough for the cheese to melt and the crust to set. Let stand for 5 minutes, then cut and serve.
